Ingredients

For the chicken

2 Chicken Thighs

1/4 tsp baking soda

2 tbs soy sauce

1 egg white

Some pepper

1/2 tsp chicken bullion paste

1/4 cup cornstarch

A bit of water to loosen if needed

For the sauce

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp gochujang

Honey to taste

1 tsp Sesame Oil

Chili flakes to taste

2 Cloves minced garlic

1 tsp ginger paste

For the slurry

1 tbsp water

2 tsp cornstarch

Step 1: Cut Chicken into bite sized cubes, add 2 tbsp soy sauce and 1/4 tsp baking soda. Baking soda may sound strange but it tenderizes the meat so well. Lots of American/Chinese restaurants do this in my area. It's a secret. Cover and let marinate in fridge while we make the rice and sauce.

Step 2: Throw some rice in the rice cooker or pot. Mix honey, gochujang, oyster sauce, garlic, soy sauce, ginger, sesame oil, graded ginger, water, sesame seeds, red pepper flakes in a cup. Mix the thicker ingredients first like the honey, oyster sauce, gochujang then add the thinner ones for a Easier time.

Step 3: Make a thickening slurry with cornstarch and water. Mix cornstarch and water in a separate bowl until fully mixed.

Step 4: In a large pot put some oil on at high/med heat but on the higher side for me. Everyones stove is different, the temperature goal is 375. Make sure you cut open a chicken peice from each batch to make sure it's cooked or check the temperature.

Step 4: Add a egg, pepper, chicken bullion, and cornstarch to your chicken and mix. Add water to loosen if mixture It to thick, should resemble thick paint. It will look VERY unpleasant and borderline disturbing but trust the prosses.

Step 5: Fry chicken, I did mine in 2 batches. I fried mine for 7 to 8 ish mins. If your using thighs and tenderizes with baking soda it is very difficult to over cook the chicken. Place in 240° F oven to keep warm.

Step 6: Pour sauce into a large pan and simmer, once simmering turn down heat and add slurry. You want her thick with 3 C's or she will be soggy. When you a spatula through the sauce it should leave a streak. Add chicken, mix serve up!
