Originally, Appalachia was a winged unicorn that was meant to lure Princess Peach into one of Bowser’s traps, but that concept was later scraped. — fun fact; even as a horse, she had intelligence and was able to speak like humans do.

Her true form remains a pegasus (corrected) but trapped in a human body. — One of her fight stages involves her becoming a centaur when the sorcerer stone that chains her to the human body, is partially damaged until you finally set her free, though she still puts up a fight, which after, in defeat, she flies off into the blinding sunlight and disappears.
