They're really spoiling us with all these new vegan products! I was so excited when I saw that Vivera was releasing vegan bacon. I went to two Sainsbury's stores and managed to grab the last box! Yay me :grin:

I wanted to try it in a traditional recipe so I went for amatriciana. We didn't have bucatini so linguine had to do :blush:

1 onion, diced
2 cloves garlic, minced
2-3 tbsp olive oil
1 box Vivera bacon pieces
2 tbsp ground paprika
1 tsp ground black pepper
1/4 tsp cayenne pepper (optional)
1/2 can chopped tomatoes
A few ladles of pasta water
Sauté the onion and garlic in olive oil. Add in the bacon and spices and cook for 5-7 minutes. Once it's golden add in the chopped tomatoes and as much pasta water as necessary to cook the sauce.
Toss the cooked pasta in the sauce and serve with cashew parmesan.
It feels more like pancetta than bacon but it's really good. It has a meaty texture and flavour that's very different from other vegan bacons I've tried so far. It's definitely going to be one a staple from now on :blush:
