Chickpea! :heart_eyes: :dog: :yum:

On my Saturday walk at the dog park… I took a break and sat down with a couple of the regulars for a few minutes. While there, a little dog named Chickpea jumped on the table and settled down on someone’s jacket. He was so adorable… everyone was saying “Chickpea, so cute, Chickpea, Chickpea, Chickpea!” After a few minutes of “Chickpea!” I knew I just had to make some chickpeas for dinner! :joy:

So after dropping the dogs at home I went to our little local market to get some dried chickpeas, some fresh veggies & a bag of dried soy crumbles.

This was the first time I added the soy curls to my pressure cooker beans… and the results were creamy and delicious! :yum:

Enjoyed the chickpeas in a few different ways… with crispy tofu and avocado along with salad on toasted sourdough, then with a fresh ear of corn & blistered broccoli. Topped with a drizzle of avocado salsa. It made for three different and tasty meals! :heart_eyes: :heart: :yum:
