My local grocer is putting more vegan items on the hot bar every week. Today I was told that one entire row will be vegan soon. Today vegan is mixed in with vegetarian and even some on the meat isle. A. vegan option may be right next to its pain and misery counterpart.
The majority of the vegan selections still lack creativity. There are pinto beans, black beans, quinoa, steamed veggies of one type or another. There is usually a sampling of a curried tofu or tempe, ratatouille, mixed roasted root veggies.
I like to mix them up and create my own dish. Today it’s toasted creamer potatoes, black beluga lentils and ratatouille. Add a little Tapatio and it’s awesome.
