CRUST:

1¼ cup all-purpose flour

¼ tsp salt

½ tsp sugar

½ cup vegan margarine, cut into small pieces

3 tbls ice water + more if needed

FILLING:

3 tbls cornstarch

1 cup water

¾ cup maple syrup

½ cup light brown sugar

½ tsp salt

2 tbls vegan margarine

1 tsp vanilla extract

2 cups unsalted pecan halves or pieces

1¼ cup all-purpose flour

DIRECTIONS:

- Maked the crust:

- In a large bowl, combine the flour, salt, and sugar.

- Use a pastry blender,(or large fork) to cut into the margarine until the mixture looks like course bread crumbs.

- Add the water a little at a time until the dough just starts to hold together.

- Flatten the dough into a disk, and refrigerate for 30 minutes while preparing the filling.

- Preheat the oven to 400°F.

- Make the filling:

- In a small bowl, combine the cornstarch, and ¼ cup water and set aside.

- In a medium saucepan, combine the remaining ¾ cup water, maple, syrup, and brown sugar.

- Bring to a boil over high heat.

- Boil for 5 minutes, then stir in the salt and cornstarch mixture.

- Cook, stirring, until mixture thickens and becomes shiny.

- Remove from heat and add the margarine and vanilla.

- Stir until margarine is full melted.

- Add the pecans.

- Stir to coat.

- Roll out the dough onto a lightly floured work surface until about 10 inches in diameter .

- Fit the crust to the pie pan. Trim and flat the edges. (Or be lazy and press the dough ball into the pan and up the sides with you finger.)

- Use a for to price small hols in the bottom of the dough to keep it from raising.

- Bake crust until golden brown, about 10 minutes.

- Remove from oven, set aside, and reduce heat to 350°F.

- Pour the filling into the crust.

- Spread evenly and bake for 30 minutes.

PERSONAL THOUGHTS:

I am not a fan of pecan pie, never have been. I'm more of a sweet potato pie person. My husband likes pecan pie, and was super excited about this recipe because it was a treat he hasn't had since high-school. The pie lasted three days.
