Louisiana style red beans with Field Roast sausage, basmati rice and a side of spinach. So good :heart_eyes:

My son brought home a case of canned spinach he got from somewhere… I’m not a fan of canned spinach, but decided to fix it up with Cajun seasoning, onion, garlic, tomato, a drop of liquid smoke and topped with nooch… the result was not bad, didn’t taste too canned! :sweat_smile: 🤩

With the leftover basmati rice & some leftover roasted Brussels… I did a veggie stir fry rice with onion, garlic, the Brussels, tomato and shredded carrots. Along side a kale’n cabbage salad and a handful of fresh blueberries. Topped with a homemade creamy cashew dressing…

Sure! I didn’t follow the original recipe exactly, it’s easy to customize…

INGREDIENTS

• 3 cups rolled oats

• 3 cups unsweetened, unflavored plant milk

• ½ cup raisins (omitted, I didn’t have any raisins)

• ¼ cup pure maple syrup (I used a mix of agave & maple)

1½ tablespoons pure vanilla extract

• 1 teaspoon ground cinnamon

• 1 cup fresh or frozen raspberries (I used fresh blackberries)

• 1 cup fresh or frozen blueberries (I used fresh)

• ½ cup sliced almonds (no almonds so I used pecans)

• Additionally I added a couple of handfuls of chia seeds & hemp hearts… totally optional :heart_eyes:

INSTRUCTIONS

• Preheat oven to 350°F. In a 2-quart baking dish combine the first six ingredients (through cinnamon). Add ¾ cup water and mix well.

• Top oatmeal mixture with raspberries, blueberries, and almonds. (I just mixed it all up together…)

• Bake 40 minutes or until bubbly around edges and heated through.

• Let stand 10 minutes. Serve warm. Reheats well in the microwave

•• also… because the fruit was fresh & had a high water content, next time I may reduce the amount of added water, but I like dryer oatmeal
