My first chickpea salad

I’ve been trying to improve my diet and have consumed a lot of fruits this week but hardly any veggies. So I did an Aldi’s haul for produce. Let’s be honest they are economical and it’s never crowded! I like shopping there it’s not as intimidating as Sprouts heh anywho I digress.

The chickpeas I drained, rinsed, and pat dry. Then I cut the stumps? Off the broccoli. I added turmeric, paprika, black pepper and salt with olive oil. Rubbed them up and baked at 400 degrees for 20 mins. (They were so damn tasty!)

Then I chopped up I think it was an English cucumber? It was super long. Bell pepper, red onion, tomatoes, and radishes.

I squeezed a lemon and added some thyme. That way it keeps it fresh longer in the fridge.

This salad was fun. I was bored with the way I made salads before. This was super refreshing.
