This is my third post about wonderful Violet recipes. I just love these flowers and there are so many wonderful things you can make with them. So here are again two of them.

Violet Jelly
I've made violet jam once, but I like this jelly way more. The flavours of apple juice and violets are a great combination!

I used this recipe.
Ingredients:
500g gelling sugar 1:1
450ml apple juice
1 lemon
4 cups violet flowers
Instructions:
1. If you want to wash the violets you can do that now. Remove the stems.
2. Squeeze out the lemon, mix it with the apple juice and bring it to a boil. Then remove it from the stove.
3. Stir the violets into the juice and let it infuse for 12 hours.
4. Drain the juice into another pot, mix it with the gelling sugar and cook it for 6 minutes.
5. Remove the foam. Then fill the jelly into sterile jars and close them.

Violet Sugar
It's simple, it's good, no more words needed. ^^

I looked into a few recipes, but mostly used this one.
Ingredients:
40-50 Violets
40g sugar
(At least 1 violet per 1 gram sugar)
Instructions:
1. Collect the violets on a dry day.
2. Remove all the green parts.
3. Mix the sugar and the violet petals and shred it. A food processor works great, but I've also seen recipes using mortar and pestle.
4. Spread the sugar onto a plate or parchment paper and let it dry.
5. Once it's dry, crush it again (I used mortar and pestle this time) and fill it into a jar. Store it in a dark place, so the color doesn't fade too fast.

wish i had seen this post an hour ago :sob: i was just in a field with a bunch of violets but i didn’t pick any because i didnt know what to do with them
Oh no! But maybe you will have the chance to go back. There is still some time left to collect them until the flowers are gone for this year. ^^
