This week we have a homey feeling main course in store: Pleadian Noodle Soup

         • Noodles

         • Broth

         • Toppings of choice

         • 1 c rice flour

         • 1 c tapioca starch

         • 1 c boiling water

         • 2 cartons chicken stock

         • 2 c room temp water

         • 1 lemongrass stalk

               (Or 1 tbsp dried in cheese cloth)

         • 2 cubes chicken bouillon

          • 2 c shredded chicken breast

         • Lime

         • Basil

         • Green Onion

         • Pepper

         • Hot Chilli Oil

         • Soy Sauce

         • Put stock in the pot bring to a boil

         • Add Bullion and lemongrass and other

           seasonings to taste (salt, pepper, fish

           sauce etc)

         • Add chicken, boil till fully cooked.

         • while the chicken is cooking make the

           noodles. Mix the rice flour and the

           tapioca starch.

         • Add one cup boiling water and mix well,

           once it starts to crumble up like dough,

           knead together with your hands. If it's too

           dry Add more water, if it's too wet Add

           tapioca starch. When it's just right it

           should feel a bit like playdough.

         • dust your work space with tapioca starch

           and roll out the dough (in sections for

           ease) to a 1/8th inch thick, then slice like

           fettuccine noodles.

         • by now the chicken should be done so

           pull it out and shread it, then toss it back

           in the pot (Also remove lemongrass

           bundle) add in 2 cups water and return to

           a boil.

         • gently add the noodles stirring so they

           don't stick to the bottom. The noodles

           will be done when the start to float and

           are soft to bite into.

         • when the Broth has thickened its ready

         • serve hot and add toppings

Other possible Toppings: Hoisin, Sriracha, Cilantro, Oyster Sauce, etc)
